Description

Delightful fish burritos filled with flaky fish, crunchy veggies, and a zesty burst of lime, perfect for any occasion.


Ingredients

  • 4 Flatout Light wraps (or large tortillas)
  • 2 tsp. vegetable oil
  • 1 lb. tilapia (or any white fish)
  • 1 lime (freshly juiced)
  • 2 tbsp. orange juice
  • 1 tbsp. ancho chili powder
  • 1/2 tsp. cumin
  • 1 cup canned black beans, drained and rinsed
  • 1 cup cole slaw mix
  • 1/2 cup avocado, sliced or diced
  • 1/2 cup tomatoes, chopped
  • 1/2 cup corn
  • 1/4 cup cilantro
  • Salt and pepper (to taste)

Instructions

  1. Marinate the fish: In a small bowl, mix together the lime juice, orange juice, chili powder, and cumin. Pour this marinade over the tilapia fillets and let them rest for 10-15 minutes.
  2. Prep the fixings: While the fish marinates, rinse the black beans, chop the tomatoes and avocado, and prepare the cole slaw mix.
  3. Cook the fish: Heat the vegetable oil in a skillet over medium-high heat. Add the marinated fish and cook for 3-4 minutes on each side until it flakes easily. Season with salt and pepper.
  4. Assemble your burritos: Lay a wrap on a clean surface and layer flaky fish, cole slaw, black beans, corn, tomatoes, cilantro, and avocado.
  5. Wrap it up: Fold the sides of the tortilla and roll from the bottom up tightly.
  6. Serve and enjoy: Optionally slice in half and serve with lime wedges.

Ensure your fish is at room temperature before cooking. Use ripe avocados for a creamy texture.
