- 4 Flatout Light wraps (or large tortillas)
- 2 tsp. vegetable oil
- 1 lb. tilapia (or any white fish)
- 1 lime (freshly juiced)
- 2 tbsp. orange juice
- 1 tbsp. ancho chili powder
- 1/2 tsp. cumin
- 1 cup canned black beans, drained and rinsed
- 1 cup cole slaw mix
- 1/2 cup avocado, sliced or diced
- 1/2 cup tomatoes, chopped
- 1/2 cup corn
- 1/4 cup cilantro
- Salt and pepper (to taste)
Instructions
- Marinate the fish: In a small bowl, mix together the lime juice, orange juice, chili powder, and cumin. Pour this marinade over the tilapia fillets and let them rest for 10-15 minutes.
- Prep the fixings: While the fish marinates, rinse the black beans, chop the tomatoes and avocado, and prepare the cole slaw mix.
- Cook the fish: Heat the vegetable oil in a skillet over medium-high heat. Add the marinated fish and cook for 3-4 minutes on each side until it flakes easily. Season with salt and pepper.
- Assemble your burritos: Lay a wrap on a clean surface and layer flaky fish, cole slaw, black beans, corn, tomatoes, cilantro, and avocado.
- Wrap it up: Fold the sides of the tortilla and roll from the bottom up tightly.
- Serve and enjoy: Optionally slice in half and serve with lime wedges.
