- 1 and 1/2 Tbsp oyster sauce
- 1 Tbsp fish sauce
- 1/2 Tbsp soy sauce
- 1 Tbsp water
- Ground black pepper, to taste
- 1/2 lb fresh egg noodles
- 80 g Chinese sausages, sliced
- 10–12 shrimp, peeled and deveined
- 1/2 onion, julienned
- 5 cloves garlic, chopped
- 1 cup julienned carrot
- 2 cups Chinese broccoli, stems thinly sliced on a bias, leaves roughly chopped
- 1/2 cup red pepper, chopped
- 2 green onions, chopped (optional)
- 3 Calamansi or 1 lime for garnish
Instructions
- Make the sauce: In a small bowl, whisk together fish sauce, oyster sauce, soy sauce, black pepper, and water until well combined. Set aside for later.
- Cook the noodles: In a large pot of boiling unsalted water, cook the fresh egg noodles according to package instructions (usually about 2-3 minutes). Prepare a bowl of ice-cold water to shock the noodles right after cooking.
- Shock noodles: Once cooked, drain the noodles and immediately plunge them into the cold water to stop further cooking. Drain again and, if desired, cut them with scissors for easier handling.
- Cook Chinese sausages: In a wok or large skillet over medium heat, add a splash of oil and sear the sliced Chinese sausages until blistered, about 2-3 minutes. Remove from the pan and set aside.
- Sear shrimp: In the same pan, add a bit more oil and throw in the shrimp. Cook until pink and opaque, about 2-3 minutes, then remove from the pan.
- Sauté onions and garlic: In the same pan, add the julienned onion and chopped garlic, sautéing until the garlic starts to brown, about 1 minute.
- Stir fry veggies: Add all the vegetables (carrots, Chinese broccoli, and red pepper) to the pan and stir-fry over high heat. Drizzle with about 2 teaspoons of the sauce and toss to combine.
- Combine it all: Add the cooked noodles and the remaining sauce to the vegetables, tossing until everything is well coated and the liquid is absorbed. Mix in the sausage and shrimp until evenly distributed.
- Finish and serve: Turn off the heat and fold in the chopped green onions, if using. Plate your delicious noodles and serve hot, drizzled with fresh calamansi or lime juice over the top.

Freshness matters: The quality of your fresh egg noodles and vegetables will significantly influence the taste. Look for organic produce when possible. You can make this dish vegetarian by omitting shrimp and sausage, adding more vegetables instead.
