  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 23 chipotle peppers in adobo sauce, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 tablespoon lime juice
  • 810 corn tortillas
  • Shredded lettuce or cabbage
  • Diced tomatoes
  • Sliced avocado
  • Grated cheese (cheddar or Monterey Jack)
  • Sour cream or Mexican crema
  • Fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Heat olive oil in skillet over medium heat. Sauté onion and garlic until translucent.
  2. Add ground meat and cook until browned, about 7-10 minutes.
  3. Stir in chipotle peppers, cumin, paprika, oregano, cayenne, salt, and pepper. Cook 2-3 minutes.
  4. Add tomato sauce and lime juice. Simmer 10-15 minutes until thickened.
  5. Warm tortillas in skillet or microwave.
  6. Assemble tacos with meat mixture, lettuce, tomatoes, avocado, cheese, and sour cream.
  7. Garnish with cilantro and serve with lime wedges.
