- 2 tablespoons olive oil

- 3 cloves garlic, minced
- 2–3 chipotle peppers in adobo sauce, chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1 cup tomato sauce
- 1 tablespoon lime juice
- 8–10 corn tortillas
- Shredded lettuce or cabbage
- Diced tomatoes
- Sliced avocado
- Grated cheese (cheddar or Monterey Jack)
- Sour cream or Mexican crema
- Fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Heat olive oil in skillet over medium heat. Sauté onion and garlic until translucent.
- Add ground meat and cook until browned, about 7-10 minutes.
- Stir in chipotle peppers, cumin, paprika, oregano, cayenne, salt, and pepper. Cook 2-3 minutes.
- Add tomato sauce and lime juice. Simmer 10-15 minutes until thickened.
- Warm tortillas in skillet or microwave.
- Assemble tacos with meat mixture, lettuce, tomatoes, avocado, cheese, and sour cream.
- Garnish with cilantro and serve with lime wedges.
Notes

- For vegetarian version, use black beans instead of meat.
