Description

A delightful blend of tart cranberries and sweet oranges, studded with crunchy nuts, perfect for the holiday season.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1/2 cup chopped walnuts or pecans
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil or melted butter
  • 1 egg, at room temperature
  • Zest of 1 medium orange

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, ground cinnamon, and orange zest until well combined.
  3. In another bowl, mix the orange juice, melted butter (or oil), and the egg. Whisk until blended and set aside.
  4. Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined.
  5. Gently fold in the chopped nuts and cranberries.
  6. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  7. Bake in your preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a sweeter touch, consider drizzling some orange glaze over the top once cooled. Store in an airtight container for up to 3 days or wrapped for up to a week in the fridge.
