- 2 cups all-purpose flour
- 1 cup fresh or frozen cranberries
- 1 cup granulated sugar
- 1/2 cup chopped walnuts or pecans
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup orange juice
- 1/4 cup vegetable oil or melted butter
- 1 egg, at room temperature
- Zest of 1 medium orange
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, ground cinnamon, and orange zest until well combined.
- In another bowl, mix the orange juice, melted butter (or oil), and the egg. Whisk until blended and set aside.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined.
- Gently fold in the chopped nuts and cranberries.
- Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
- Bake in your preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a sweeter touch, consider drizzling some orange glaze over the top once cooled. Store in an airtight container for up to 3 days or wrapped for up to a week in the fridge.
