A heartwarming dish of baked eggs in creamy custard with melted cheese, perfect for breakfast or brunch.
Ingredients

- 4 Large Eggs
- 4 tbsp Heavy Cream
- 50 g Grated Cheese (Gruyère or cheddar)
- Salt and Black Pepper (to taste)
- 1 tbsp Chives (chopped, for garnishing)
- Optional: Ham or Smoked Salmon (chopped)
Instructions
- Preheat your oven to 375°F (190°C).
- Generously butter each ramekin.
- Pour one tablespoon of heavy cream into each ramekin.
- If using ham or smoked salmon, add a layer at the bottom.
- Gently crack one egg into each ramekin, season with salt and pepper.
- Sprinkle the grated cheese over the eggs and drizzle with another tablespoon of cream.
- Place the ramekins in a deep baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
- Bake for 12-15 minutes until the whites are set and the yolks still wobble.
- Carefully remove from the water, let cool, garnish with chopped chives, and serve.
Notes
Make ahead and refrigerate the ramekins; adjust baking time if starting from the fridge. Best enjoyed fresh, but can be stored for a day in the refrigerator.
