- 2 medium Eggplant
- 2 tablespoons Olive Oil
- 1 cup Ricotta Cheese
- 1 cup Mozzarella Cheese
- 2 cups Marinara Sauce
- 1 cup Fresh Basil
- 3 cloves Garlic
Instructions
- Preheat the oven to 375°F (190°C).
- Slice eggplants into half-inch-thick rounds, rinse and pat dry if salted. Drizzle olive oil on both sides.
- Sauté minced garlic in olive oil until fragrant.
- Arrange eggplant slices on a baking sheet and bake for about 20 minutes until tender and slightly charred.
- In a baking dish, spread a layer of marinara sauce, followed by layers of eggplant, ricotta, mozzarella, and basil. Repeat layers ending with marinara and cheese on top.
- Cover with foil and bake for 25 minutes. Uncover and bake for an additional 15 minutes until bubbly and golden.
Notes
Consider adding grated Parmesan for extra flavor. This dish can be prepared a day in advance.
