- 1 cup eggnog (cold)
- 3 large eggs, separated
- 2 tablespoons granulated sugar
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- 1 tablespoon unsalted butter (for greasing ramekins)
- Powdered sugar (optional, for dusting)
- A pinch of salt
Instructions
- Butter 4 ramekins, each about 6 oz, using 1 tablespoon of unsalted butter.
- Carefully separate the yolks and whites of the eggs into two bowls.
- In the yolk bowl, whisk together eggnog, cinnamon, nutmeg, vanilla, and flour until smooth.
- Add a pinch of salt to the egg whites, and beat until soft peaks form. Gradually add sugar, continuing to whip until stiff peaks form.
- Gently add 1/3 of the whipped egg whites to the yolks and stir gently; fold in the remaining egg whites carefully.
- Spoon the mixture evenly into the greased ramekins and place them on a baking sheet.
- Preheat the oven to 375°F (190°C) and bake for 13 to 15 minutes until golden brown and risen.
- Serve immediately and dust lightly with powdered sugar before serving.
Notes
Use high-quality eggnog for the best results. Make sure eggs are at room temperature for better volume.
