Ingredients

  • 1 cup eggnog (cold)
  • 3 large eggs, separated
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 tablespoon unsalted butter (for greasing ramekins)
  • Powdered sugar (optional, for dusting)
  • A pinch of salt

Instructions

  1. Butter 4 ramekins, each about 6 oz, using 1 tablespoon of unsalted butter.
  2. Carefully separate the yolks and whites of the eggs into two bowls.
  3. In the yolk bowl, whisk together eggnog, cinnamon, nutmeg, vanilla, and flour until smooth.
  4. Add a pinch of salt to the egg whites, and beat until soft peaks form. Gradually add sugar, continuing to whip until stiff peaks form.
  5. Gently add 1/3 of the whipped egg whites to the yolks and stir gently; fold in the remaining egg whites carefully.
  6. Spoon the mixture evenly into the greased ramekins and place them on a baking sheet.
  7. Preheat the oven to 375°F (190°C) and bake for 13 to 15 minutes until golden brown and risen.
  8. Serve immediately and dust lightly with powdered sugar before serving.

Notes

Use high-quality eggnog for the best results. Make sure eggs are at room temperature for better volume.
