Description

Delightful and festive eggnog-infused thumbprint cookies, perfect for holiday gatherings.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 1/2 teaspoons cream of tartar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup eggnog
  • 1/2 cup powdered sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon (for rolling)
  • 1/4 cup sugar (for rolling)

Instructions

  1. In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt until combined. Set aside.
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add eggs, one at a time, followed by vanilla extract. Beat until smooth and creamy.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined to form a soft dough.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 1 hour.
  6. Preheat the oven to 350°F (175°C). In a small bowl, mix together cinnamon and sugar for rolling.
  7. Scoop tablespoon-sized portions of dough, roll into balls, and coat in cinnamon sugar. Place on a baking sheet and create a thumbprint in each ball.
  8. Bake for 10-12 minutes or until edges are golden but centers remain soft. Cool on wire racks.
  9. In a saucepan, whisk together eggnog, powdered sugar, cornstarch, and nutmeg until thickened. Let cool.
  10. Fill each thumbprint with the eggnog mixture and let set before serving.

Notes

Store cookies in an airtight container for up to 5 days. Can be frozen for longer storage. Customize filling sweetness to your liking.
