- 2 3/4 cups all-purpose flour
- 1 1/2 teaspoons cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/4 cup eggnog
- 1/2 cup powdered sugar
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon (for rolling)
- 1/4 cup sugar (for rolling)
Instructions
- In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt until combined. Set aside.
- In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add eggs, one at a time, followed by vanilla extract. Beat until smooth and creamy.
- Gradually add the dry ingredients to the wet mixture, stirring until combined to form a soft dough.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 1 hour.
- Preheat the oven to 350°F (175°C). In a small bowl, mix together cinnamon and sugar for rolling.
- Scoop tablespoon-sized portions of dough, roll into balls, and coat in cinnamon sugar. Place on a baking sheet and create a thumbprint in each ball.
- Bake for 10-12 minutes or until edges are golden but centers remain soft. Cool on wire racks.
- In a saucepan, whisk together eggnog, powdered sugar, cornstarch, and nutmeg until thickened. Let cool.
- Fill each thumbprint with the eggnog mixture and let set before serving.
Notes
Store cookies in an airtight container for up to 5 days. Can be frozen for longer storage. Customize filling sweetness to your liking.
