- 4 cups eggnog
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup golden raisins
- Pinch of salt
Instructions
- In a medium saucepan, combine Arborio rice, eggnog, and whole milk. Stir gently to combine.
- Stir in granulated sugar, a pinch of salt, ground cinnamon, and ground nutmeg.
- Increase heat to bring the mixture to a gentle simmer. Lower the heat and stir frequently, cooking for about 35 to 40 minutes, or until the rice is soft and the pudding is thick and creamy.
- Stir in vanilla extract and golden raisins, cooking for an additional 5 minutes to plump the raisins.
- Remove from heat and let sit for 5 minutes to thicken.
- Spoon into bowls and sprinkle with additional cinnamon or nutmeg if desired.
Notes
Can be served warm or chilled. For a festive touch, add whipped cream, crushed ginger snaps, or a drizzle of caramel sauce.
