Ingredients

  • 4 cups eggnog
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup golden raisins
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine Arborio rice, eggnog, and whole milk. Stir gently to combine.
  2. Stir in granulated sugar, a pinch of salt, ground cinnamon, and ground nutmeg.
  3. Increase heat to bring the mixture to a gentle simmer. Lower the heat and stir frequently, cooking for about 35 to 40 minutes, or until the rice is soft and the pudding is thick and creamy.
  4. Stir in vanilla extract and golden raisins, cooking for an additional 5 minutes to plump the raisins.
  5. Remove from heat and let sit for 5 minutes to thicken.
  6. Spoon into bowls and sprinkle with additional cinnamon or nutmeg if desired.

Notes

Can be served warm or chilled. For a festive touch, add whipped cream, crushed ginger snaps, or a drizzle of caramel sauce.
