Description

Delightful Eggnog Muffins combining rich eggnog flavor with warm spices, perfect for holiday gatherings.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground nutmeg
  • 1 cup eggnog, room temperature
  • 2 large eggs, room temperature
  • 1/4 cup (57 g) unsalted butter, melted & slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour (for streusel)
  • 1/2 cup (100 g) light brown sugar, packed (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 1/2 teaspoon kosher salt (for streusel)
  • 1/2 cup (113 g) unsalted butter, melted (for streusel)
  • 1 cup (125 g) confectioners’ sugar (for glaze)
  • 23 tablespoons eggnog (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the flour, sugar, baking powder, cinnamon, salt, and nutmeg in a bowl.
  3. Whisk the eggnog, eggs, melted butter, and vanilla in another bowl until smooth.
  4. Combine the dry ingredients with the wet mixture, mixing until just combined.
  5. Fill the muffin cups about 3/4 full with the batter.
  6. Make the streusel by combining flour, brown sugar, cinnamon, salt, and melted butter in a bowl.
  7. Add a tablespoon of streusel topping on each muffin and press lightly.
  8. Bake for 22-24 minutes until a toothpick comes out clean.
  9. Cool the muffins completely in the pan before glazing them.
  10. Drizzle a glaze of confectioners’ sugar and eggnog on top before serving.
