Delightful Eggnog Muffins combining rich eggnog flavor with warm spices, perfect for holiday gatherings.

- 2 cups (250 g) all-purpose flour
- 1/2 cup (100 g) granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground nutmeg
- 1 cup eggnog, room temperature
- 2 large eggs, room temperature
- 1/4 cup (57 g) unsalted butter, melted & slightly cooled
- 1 teaspoon vanilla extract
- 1 cup (125 g) all-purpose flour (for streusel)
- 1/2 cup (100 g) light brown sugar, packed (for streusel)
- 1 teaspoon ground cinnamon (for streusel)
- 1/2 teaspoon kosher salt (for streusel)
- 1/2 cup (113 g) unsalted butter, melted (for streusel)
- 1 cup (125 g) confectioners’ sugar (for glaze)
- 2–3 tablespoons eggnog (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the flour, sugar, baking powder, cinnamon, salt, and nutmeg in a bowl.
- Whisk the eggnog, eggs, melted butter, and vanilla in another bowl until smooth.
- Combine the dry ingredients with the wet mixture, mixing until just combined.
- Fill the muffin cups about 3/4 full with the batter.
- Make the streusel by combining flour, brown sugar, cinnamon, salt, and melted butter in a bowl.
- Add a tablespoon of streusel topping on each muffin and press lightly.
- Bake for 22-24 minutes until a toothpick comes out clean.
- Cool the muffins completely in the pan before glazing them.
- Drizzle a glaze of confectioners’ sugar and eggnog on top before serving.

Store in an airtight container for up to three days or freeze for up to three months.
