Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup eggnog (store-bought or homemade)
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • For the Crumble Topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, whisk together the eggs, eggnog, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold together until just combined (the batter may be slightly lumpy).
  5. In a small bowl, mix the crumble topping ingredients until it resembles wet sand.
  6. Fill each muffin liner about 3/4 full with batter and sprinkle the crumble topping evenly on top.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use freshly grated nutmeg for enhanced flavor. Ensure butter is cool when adding to the batter.
