- 1 cup eggnog (store-bought or homemade)
- 1/2 cup unsalted butter, melted
- 1 tsp vanilla extract
- For the Crumble Topping:
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt until well combined.
- In another bowl, whisk together the eggs, eggnog, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and fold together until just combined (the batter may be slightly lumpy).
- In a small bowl, mix the crumble topping ingredients until it resembles wet sand.
- Fill each muffin liner about 3/4 full with batter and sprinkle the crumble topping evenly on top.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
Use freshly grated nutmeg for enhanced flavor. Ensure butter is cool when adding to the batter.
