- 1/2 cup light, mild oil (extra light olive oil or avocado oil)
- 1/4 cup milk (2%, or plant-based for vegan option)
- Pinch of salt and pepper (to taste)
- 1 teaspoon apple cider vinegar
- 1 teaspoon Dijon mustard (or honey Dijon mustard)
Instructions
- Gather all ingredients and ensure they are at room temperature.
- Add oil, milk, salt, pepper, vinegar, and mustard to a jar or tall bowl.
- Using an immersion blender, blend at the bottom of the jar for about 30 seconds.
- Slowly lift the blender while blending to incorporate all ingredients until thickened.
- Check consistency, blending longer if necessary, and then pour into a clean jar.
Notes
Store in a tightly sealed jar in the fridge for up to 10 days. If mayo separates, re-blend to combine.
