- 2 cups shelled edamame
- 2 cups frozen organic corn
- 1 red bell pepper, chopped
- 1/2 cup finely chopped red onion
- 1/3 cup chopped green onion
- Cilantro for garnish
- 1/4 cup lime juice
- 1/3 cup avocado oil
- 1 tablespoon red apple vinegar
- 1 tablespoon honey or agave
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cumin
Instructions
- Prepare the Edamame: Cook the shelled edamame following the package instructions. If using the pods, boil them in salted water for about 4-5 minutes until tender.
- Cook the Corn: Heat the frozen corn in a skillet over medium heat for about 5-7 minutes or until heated through.
- Chop the Veggies: Dice the red bell pepper and finely chop the red and green onions. Combine all veggies in a large bowl with the cooked edamame and corn.
- Make the Dressing: In a mason jar, combine lime juice, avocado oil, red apple vinegar, reserved cilantro, honey, sea salt, black pepper, and cumin. Shake vigorously until well combined.
- Toss It All Together: Pour the dressing over the salad mixture and toss gently to coat. Garnish with reserved cilantro.
