- 2 lbs chicken breast
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 14 oz canned pinto beans, drained and rinsed
- 14 oz canned white beans, drained and rinsed
- 14 oz canned corn, drained and rinsed
- 16 oz green salsa
- 4 cups fat-free chicken broth
Instructions
- Add all the ingredients to the slow cooker. Stir everything together to combine.
- Cook on low for 4 hours or until the chicken is fully cooked.
- Remove the chicken, shred or chop it, and then return it to the pot. Serve with your favorite toppings!
Notes
For an added depth of flavor, sauté diced onions and garlic in olive oil before adding them and the remaining ingredients for an aromatic start. This chili is perfect for meal prep and can be easily customized to suit different tastes or dietary restrictions.
