- 12 cloves garlic (minced, about 1/2 cup)
- 1/2 cup diced carrots
- 4 cups steamed rice (preferably day-old)
- 4 tablespoons soy sauce
- 4 green onions (finely chopped)
Instructions
- Heat the oil in a large wok over medium-high heat for about 2 minutes.
- Toss in the minced garlic and stir quickly until slightly golden and fragrant, about 30-45 seconds.
- Add the diced carrots and stir-fry for about 1-2 minutes until tender but still crunchy.
- Introduce the rice, breaking any clumps and mixing well with garlic and carrots, about 2-3 minutes.
- Drizzle in the soy sauce while stirring for another 2 minutes until well incorporated.
- Toss in the finely chopped green onions and stir to combine. Turn off the heat and serve immediately.
Notes
Use day-old rice for the best texture. Adjust soy sauce for gluten-free options. Store leftovers in an airtight container for up to 4 days.
