Ingredients

  • 12 cloves garlic (minced, about 1/2 cup)
  • 1/2 cup diced carrots
  • 4 cups steamed rice (preferably day-old)
  • 4 tablespoons soy sauce
  • 4 green onions (finely chopped)

Instructions

  1. Heat the oil in a large wok over medium-high heat for about 2 minutes.
  2. Toss in the minced garlic and stir quickly until slightly golden and fragrant, about 30-45 seconds.
  3. Add the diced carrots and stir-fry for about 1-2 minutes until tender but still crunchy.
  4. Introduce the rice, breaking any clumps and mixing well with garlic and carrots, about 2-3 minutes.
  5. Drizzle in the soy sauce while stirring for another 2 minutes until well incorporated.
  6. Toss in the finely chopped green onions and stir to combine. Turn off the heat and serve immediately.

Notes
