- 1 can canned chickpeas (drained and rinsed)
- 2 tablespoons olive oil (for sautéing)
- 3 cloves garlic (minced)
- 1 inch fresh ginger (grated)
- 1 red bell pepper (diced)
- 1 zucchini (sliced)
- 2 cups spinach (fresh)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 0.5 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon turmeric
- 0.25 cup fresh cilantro (chopped)
- 1 tablespoon lemon juice (squeezed)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and grated ginger; sauté for 1-2 minutes until fragrant and golden.
- Toss in the red bell pepper and zucchini; cook for 3-4 minutes until softened.
- Add the drained chickpeas and stir well, cooking for another 5 minutes.
- Sprinkle in the cumin, smoked paprika, cayenne, and turmeric; cook for 2 minutes.
- Fold in the spinach, letting it wilt for 1-2 minutes; add lemon juice and cilantro, stirring to combine.
- Taste and adjust seasonings as desired.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat before serving.
