Ingredients

  • 1 lb shrimp, deveined and peeled
  • 4 small flour or corn tortillas
  • 2 cups shredded cabbage (green or purple)
  • 1 large carrot, grated
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/2 cup sour cream (or Greek yogurt)
  • Salt, to taste
  • Pepper, freshly cracked, to taste
  • Your favorite toppings (avocado, salsa, jalapeños, pickled onions)

Instructions

  1. Season the shrimp with salt and pepper. Heat oil in a skillet over medium heat, add the shrimp, and cook for 3-4 minutes until pink and opaque.
  2. In a bowl, combine shredded cabbage, grated carrot, and chopped cilantro for the slaw. Toss gently.
  3. Mix sour cream, lime juice, and a pinch of salt in another bowl to make the crema.
  4. Warm the tortillas in a skillet or microwave until pliable.
  5. Assemble tacos by placing shrimp and slaw in warm tortillas, drizzling with crema, and adding any extra toppings.
  6. Serve immediately while warm.

Notes

For the best results, thaw frozen shrimp and pat dry. Serve with cilantro-lime rice or tortilla chips for a complete meal.
