  • 2 tablespoons tomato paste
  • 1 cup beef broth

  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, brown the ground beef until nicely cooked, about 5-7 minutes, then drain excess fat.
  3. Add the chopped onion and minced garlic, cooking for 3-4 minutes until translucent.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, and season with salt and pepper. Simmer for 5-7 minutes until thickened.
  5. Pour the beef mixture into a casserole dish and spread evenly.
  6. Spread the prepared mashed potatoes over the beef mixture, ensuring complete coverage.
  7. Dot with room temperature butter and sprinkle cheddar cheese on top if desired.
  8. Bake for 20-30 minutes until the top is golden and bubbly.
  9. Let cool for 5 minutes before serving.
