Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup honey
  • 1/2 cup feta cheese, crumbled
  • Fresh herbs (such as thyme or rosemary) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Spread the pieces out evenly.
  3. Roast in the oven for about 25-30 minutes, or until tender and caramelized.
  4. Drizzle honey over the roasted squash and sprinkle with feta cheese. Return to the oven for an additional 5 minutes.
  5. Garnish with fresh herbs before serving.
