- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup honey
- 1/2 cup feta cheese, crumbled
- Fresh herbs (such as thyme or rosemary) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Spread the pieces out evenly.
- Roast in the oven for about 25-30 minutes, or until tender and caramelized.
- Drizzle honey over the roasted squash and sprinkle with feta cheese. Return to the oven for an additional 5 minutes.
- Garnish with fresh herbs before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can prepare the squash a day in advance.
