Description
Crispy potato skins loaded with melted cheese, crispy bacon, and green onions – the perfect game day appetizer or party snack that’s easy to make and always a crowd-pleaser.
Ingredients
- 8 medium potatoes
- 2 cups cheese (Cheddar, Jack, or Mozzarella)
- 4 scallions
- 12 oz bacon
- 1 cup sour cream
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes and pierce with fork.
- Bake potatoes directly on oven rack for 50-60 minutes until tender. Let cool slightly.
- Cut potatoes in half lengthwise. Scoop out flesh, leaving 1/4-inch thick shell.
- Increase oven to 450°F (230°C). Brush potato skins inside and out with oil.
- Sprinkle with salt, garlic powder, and paprika. Place skin-side up on baking sheet.
- Bake for 10 minutes, flip, and bake 10 more minutes until crispy.
- Fill skins with cheese and bacon. Return to oven for 3-5 minutes until cheese melts.
- Garnish with green onions and serve with sour cream.

- Save scooped potato for mashed potatoes or soup
- For extra crispiness, broil for last 1-2 minutes
- Add jalapeños for spicy version
