Ingredients

  • 8 medium potatoes
  • 2 cups cheese (Cheddar, Jack, or Mozzarella)
  • 4 scallions
  • 12 oz bacon
  • 1 cup sour cream

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce with fork.
  2. Bake potatoes directly on oven rack for 50-60 minutes until tender. Let cool slightly.
  3. Cut potatoes in half lengthwise. Scoop out flesh, leaving 1/4-inch thick shell.
  4. Increase oven to 450°F (230°C). Brush potato skins inside and out with oil.
  5. Sprinkle with salt, garlic powder, and paprika. Place skin-side up on baking sheet.
  6. Bake for 10 minutes, flip, and bake 10 more minutes until crispy.
  7. Fill skins with cheese and bacon. Return to oven for 3-5 minutes until cheese melts.
  8. Garnish with green onions and serve with sour cream.
