- 1.5 lbs boneless skinless chicken breasts or thighs
- 1/2 cup balsamic vinegar plus an extra splash for the glaze
- 2 tablespoons olive oil plus more for cooking peaches if needed
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2–3 fresh peaches, sliced
- 1 tablespoon honey (optional)
- 2–3 tablespoons fresh basil, chopped (for garnish)
- 1/4 cup thinly sliced red onion (optional)
Instructions
- Marinate the Chicken: In a bowl or a zip-top bag, whisk together balsamic vinegar, olive oil, garlic, salt, and pepper. Add the chicken, seal, and refrigerate for at least 30 minutes.
- Sear the Chicken: Heat olive oil in a skillet and sear the marinated chicken for 5-6 minutes per side until golden brown. Keep warm.
- Make the Balsamic Glaze: In the same skillet, add leftover marinade, an extra splash of balsamic vinegar, and honey. Simmer for 5-7 minutes until thickened.
- Cook the Peaches: Sauté sliced peaches in the skillet for 3-4 minutes until softened and golden.
- Assemble the Dish: Return chicken to the skillet, nestling it among the peaches. Drizzle with balsamic glaze and warm through.
- Serve: Garnish with basil and optional red onion, and serve warm with your choice of sides.
