Tender and flavorful pork ribs baked in the oven with a rich, homemade BBQ sauce that captures the essence of classic American barbecue.

- 1 rack of pork back ribs or spare ribs
- 2 tablespoons paprika
- 1 tablespoon plus 1 teaspoon cumin seeds
- 1 tablespoon coriander seeds
- 2 teaspoons cinnamon
- 2 teaspoons dried oregano
- 2 teaspoons black pepper
- 1/2 to 1 teaspoon chili powder or cayenne pepper
- 3/4 teaspoon salt
- 1 1/2 to 2 cups low-sodium stock (chicken or vegetable)
- 2 cloves garlic, minced
- 1/4 cup diced onions
- 1/2 cup ketchup
- 3 tablespoons dark brown sugar
- 2 tablespoons tamarind juice or apple cider vinegar
- 1 1/2 tablespoons rice vinegar
- 2 tablespoons plus 2 teaspoons soy sauce
- 2 tablespoons sweet soy sauce (Kecap Manis)
- 2 teaspoons Worcestershire sauce
Instructions
- Make the spice rub by combining all the spices in a coffee grinder and grinding until fine.
- Prepare the ribs by cutting them in half and sprinkling the spice rub generously over them.
- Add stock to the pan and cover tightly. Preheat your oven to 325°F (160°C) and bake for 150 minutes.
- Make the BBQ sauce by sautéing onions and garlic, then combining all sauce ingredients and simmering until thickened.
- Check for tenderness by ensuring the ribs are soft and pulling away from the bone.
- Brush with BBQ sauce before serving and keep extra sauce on the side for dipping.
Notes
Residual spice rub can be stored for future use. Timings are key; avoid overbaking for the best results.
