Description

Tender and flavorful pork ribs baked in the oven with a rich, homemade BBQ sauce that captures the essence of classic American barbecue.


Ingredients

  • 1 rack of pork back ribs or spare ribs
  • 2 tablespoons paprika
  • 1 tablespoon plus 1 teaspoon cumin seeds
  • 1 tablespoon coriander seeds
  • 2 teaspoons cinnamon
  • 2 teaspoons dried oregano
  • 2 teaspoons black pepper
  • 1/2 to 1 teaspoon chili powder or cayenne pepper
  • 3/4 teaspoon salt
  • 1 1/2 to 2 cups low-sodium stock (chicken or vegetable)
  • 2 cloves garlic, minced
  • 1/4 cup diced onions
  • 1/2 cup ketchup
  • 3 tablespoons dark brown sugar
  • 2 tablespoons tamarind juice or apple cider vinegar
  • 1 1/2 tablespoons rice vinegar
  • 2 tablespoons plus 2 teaspoons soy sauce
  • 2 tablespoons sweet soy sauce (Kecap Manis)
  • 2 teaspoons Worcestershire sauce

Instructions

  1. Make the spice rub by combining all the spices in a coffee grinder and grinding until fine.
  2. Prepare the ribs by cutting them in half and sprinkling the spice rub generously over them.
  3. Add stock to the pan and cover tightly. Preheat your oven to 325°F (160°C) and bake for 150 minutes.
  4. Make the BBQ sauce by sautéing onions and garlic, then combining all sauce ingredients and simmering until thickened.
  5. Check for tenderness by ensuring the ribs are soft and pulling away from the bone.
  6. Brush with BBQ sauce before serving and keep extra sauce on the side for dipping.

Notes

Residual spice rub can be stored for future use. Timings are key; avoid overbaking for the best results.
