Description

Delightfully creamy and comforting mashed sweet potatoes with roasted garlic and mascarpone, perfect for any dinner.


Ingredients

  • 1 head garlic (whole, for roasting)
  • Olive oil (for garlic)
  • 3 pounds sweet potatoes (peeled and cut into 1-inch cubes)
  • ¾ to 1 cup mascarpone cheese (softened at room temperature)
  • 2 tablespoons unsalted butter (melted)
  • ⅓ cup half-and-half (warmed up)
  • Ground cinnamon (to taste)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C). Slice off the top of the garlic head, drizzle with olive oil, and wrap it in foil. Roast for 35-40 minutes.
  2. In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook for 18-20 minutes until tender. Drain well and transfer to a mixing bowl.
  3. Add the roasted garlic cloves, softened mascarpone, melted butter, and warmed half-and-half to the sweet potatoes. Add more dairy for desired creaminess.
  4. Using a potato masher, mash everything together until creamy and well combined. Season with ground cinnamon, salt, and pepper to taste.
  5. Serve topped with warm butter and, optionally, drizzled with maple syrup.

Notes

For extra flavor, consider adding a pinch of cayenne pepper or smoked paprika. Store leftovers in an airtight container for up to 3 days.
