Delightfully creamy and comforting mashed sweet potatoes with roasted garlic and mascarpone, perfect for any dinner.

- 1 head garlic (whole, for roasting)
- Olive oil (for garlic)
- 3 pounds sweet potatoes (peeled and cut into 1-inch cubes)
- ¾ to 1 cup mascarpone cheese (softened at room temperature)
- 2 tablespoons unsalted butter (melted)
- ⅓ cup half-and-half (warmed up)
- Ground cinnamon (to taste)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 425°F (220°C). Slice off the top of the garlic head, drizzle with olive oil, and wrap it in foil. Roast for 35-40 minutes.
- In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook for 18-20 minutes until tender. Drain well and transfer to a mixing bowl.
- Add the roasted garlic cloves, softened mascarpone, melted butter, and warmed half-and-half to the sweet potatoes. Add more dairy for desired creaminess.
- Using a potato masher, mash everything together until creamy and well combined. Season with ground cinnamon, salt, and pepper to taste.
- Serve topped with warm butter and, optionally, drizzled with maple syrup.
Notes
For extra flavor, consider adding a pinch of cayenne pepper or smoked paprika. Store leftovers in an airtight container for up to 3 days.
