Description
A quick and flavorful Korean-inspired spicy noodle dish with tender beef, coated in a sweet and spicy gochujang sauce. Perfect for a weeknight meal!
Ingredients
- 1 lb Korean noodles (also known as “glass noodles” or “sweet potato noodles”)
- 1 lb beef (flank steak or sirloin works well)
- 1 lb mushrooms (shiitake or button, your choice)
- 1/2 lb carrots (julienned)
- 1 bunch green onions
- 1 lb spinach
For the Sauce:
- 6 tbsp soy sauce (preferably low-sodium)
- 2 tbsp brown sugar
- 4 tbsp sesame oil
- 2 tbsp sriracha sauce
- 1 tbsp crushed red peppers (optional for extra heat).
- 1 tbsp sesame seeds (for garnish)
Instructions
- Cook noodles according to package instructions, then drain and rinse under cold water. Set aside.
- In a bowl, mix gochujang, soy sauce, honey, sesame oil, garlic, ginger, and rice vinegar to make the sauce.
- Heat vegetable oil in a large pan over medium-high heat. Add beef and cook until browned (2-3 minutes).
- Pour in the sauce and beef broth, stirring to coat the beef. Simmer for 2-3 minutes until slightly thickened.
- Add the cooked noodles and toss well to combine. Cook for another 1-2 minutes.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- Adjust gochujang for more or less spice.
- Can substitute beef with chicken or tofu for variation.
- For extra veggies, add bell peppers or mushrooms.
