  4. Incorporate egg and vanilla: Beat in the egg and vanilla extract until fully integrated.
  5. Gradually add dry to wet: Slowly incorporate the dry mixture to the butter mixture, mixing until just combined; do not overmix.
  6. Fold in peaches: Gently fold in diced peaches to keep their integrity intact.
  7. Layer the batter: Pour half of the batter into the prepared cake pan, then sprinkle rolled oats evenly over it.
  8. Finish layering: Top with the remaining batter and sprinkle with additional rolled oats if desired.
