- ½ cup granulated sugar
- 2 cups all-purpose flour

- 3 large eggs
- 1½ cups granulated sugar
- 1 teaspoon vanilla extract

- 1½ cups shredded sweetened coconut
- ½ cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Slowly add in the flour and salt, mixing until a crumbly dough forms. Press the mixture evenly into a greased 9×13-inch baking dish.
- Bake the crust for 15–18 minutes until golden at the edges.
- While the crust is baking, beat the eggs until foamy, about 3 minutes. Add sugar, vanilla extract, and salt; stir to combine.
- Fold in the flour and shredded coconut until well combined.
- Spread the coconut mixture evenly over the hot crust and return to the oven.
- Bake for another 20–25 minutes until golden brown and the center is set.
- Allow to cool completely in the pan before slicing into squares or rectangles.
Notes
