  • 3 large eggs
  • 1½ cups granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1½ cups shredded sweetened coconut
  • ½ cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Slowly add in the flour and salt, mixing until a crumbly dough forms. Press the mixture evenly into a greased 9×13-inch baking dish.
  4. Bake the crust for 15–18 minutes until golden at the edges.
  5. While the crust is baking, beat the eggs until foamy, about 3 minutes. Add sugar, vanilla extract, and salt; stir to combine.
  6. Fold in the flour and shredded coconut until well combined.
  7. Spread the coconut mixture evenly over the hot crust and return to the oven.
  8. Bake for another 20–25 minutes until golden brown and the center is set.
  9. Allow to cool completely in the pan before slicing into squares or rectangles.

Notes
