Ingredients

- 1 cup diced leftover ham
- 1 can white beans (like cannellini or navy beans), drained and rinsed
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 clove garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: Spinach or kale
Instructions
- Sauté the onion, carrots, and celery in olive oil over medium heat for 5-7 minutes until softened.
- Add minced garlic and cook for an additional 1-2 minutes.
- Stir in diced ham, white beans, chicken broth, dried thyme, and season to taste.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- If using, fold in spinach or kale during the last 5 minutes of cooking.
- Serve hot and adjust seasonings as needed.
Notes
This soup stores well in the fridge for up to 4 days and can be frozen for up to 3 months. When reheating, add a splash of water or broth if needed.
