Description

A comforting bowl of homemade ham and bean soup filled with tender chunks of ham, creamy beans, and hearty vegetables.


Ingredients

  • 1 cup diced leftover ham
  • 1 can white beans (like cannellini or navy beans), drained and rinsed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Spinach or kale

Instructions

  1. Sauté the onion, carrots, and celery in olive oil over medium heat for 5-7 minutes until softened.
  2. Add minced garlic and cook for an additional 1-2 minutes.
  3. Stir in diced ham, white beans, chicken broth, dried thyme, and season to taste.
  4. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  5. If using, fold in spinach or kale during the last 5 minutes of cooking.
  6. Serve hot and adjust seasonings as needed.

Notes

This soup stores well in the fridge for up to 4 days and can be frozen for up to 3 months. When reheating, add a splash of water or broth if needed.
