- 4 cups grated or shredded carrots
- 1 medium Granny Smith apple, julienned
- 1/4 cup chopped pecans, lightly toasted
- 1/4 cup golden raisins
- 1/4 cup black raisins
- 1/4 cup avocado mayo
- 1 tablespoon maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon fresh lemon zest
- 1/2 teaspoon kosher salt
- Pinch of black pepper
Instructions
- Prep the Ingredients: Grate or shred the carrots and julienne the apple.
- Mix the Salad: In a large bowl, combine grated carrots, apple, both types of raisins, and pecans; toss well.
- Prepare the Dressing: In a medium bowl, whisk together avocado mayo, maple syrup, lemon juice, lemon zest, kosher salt, and black pepper until creamy.
- Combine: Pour dressing over the salad and gently toss until well-coated.
- Serve: Chill in the fridge for at least 30 minutes before serving, delicious cold or at room temperature.
Notes
For best texture, add the apple just before serving. Store in an airtight container in the refrigerator for up to 3 days.
