- 4 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup chopped spinach (optional)
- Salt and pepper to taste
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin with cooking spray or oil.
- Whisk the eggs in a mixing bowl until well combined and frothy.
- Add the cottage cheese and shredded cheese to the eggs, stirring until fully combined.
- If using, mix in the chopped spinach and season with salt and pepper.
- Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 18-20 minutes until puffed up and lightly golden.
- Allow the bites to cool slightly before gently removing them from the tin. Serve warm or store for later.
Notes
For a dairy-free version, substitute cottage cheese with silken tofu or plant-based alternatives. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
