Description

Perfectly fluffy and nutritious egg bites made with cottage cheese, perfect for busy mornings.


Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup chopped spinach (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or oil.
  3. Whisk the eggs in a mixing bowl until well combined and frothy.
  4. Add the cottage cheese and shredded cheese to the eggs, stirring until fully combined.
  5. If using, mix in the chopped spinach and season with salt and pepper.
  6. Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 18-20 minutes until puffed up and lightly golden.
  8. Allow the bites to cool slightly before gently removing them from the tin. Serve warm or store for later.

Notes

For a dairy-free version, substitute cottage cheese with silken tofu or plant-based alternatives. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
