  • Author: chef-caterina

  • Diet: Vegetarian

Description

A delightful confection of crispy pecans, buttery caramel, and luscious chocolate, perfect for holiday gifting and indulgence.

Ingredients

Scale
  • 1 cup pecan halves
  • 1 cup caramels (unwrapped)
  • 2 tablespoons heavy cream
  • 1 cup chocolate chips
  • Sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast for 7-10 minutes until fragrant.
  2. In a saucepan over medium-low heat, combine the unwrapped caramels and heavy cream. Stir constantly until melted and smooth, about 8-10 minutes.
  3. On a parchment-lined baking sheet, place groups of 3 pecans in the shape of a turtle shell. Spoon caramel onto each group, allowing it to drizzle down the sides.
  4. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals until smooth. Drizzle over the caramel-topped pecans and sprinkle with sea salt if desired.
  5. Allow the turtles to set at room temperature for about an hour until the chocolate is firm.

Notes

Store in an airtight container at room temperature for up to a week, or in the fridge for two weeks. Can be made two weeks in advance for holiday gifting.
