Description

Delicious and simple cranberry orange muffins perfect for the festive season, bursting with flavor and nostalgia.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh orange juice
  • 1 cup fresh cranberries
  • Zest of 1 orange

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease them with melted butter.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.
  3. In another bowl, combine the melted butter, eggs, vanilla extract, and orange juice. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Gently fold in the cranberries and orange zest using a spatula.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow to cool in the muffin tin for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for up to 3 months.
