- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup fresh orange juice
- 1 cup fresh cranberries
- Zest of 1 orange
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease them with melted butter.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.
- In another bowl, combine the melted butter, eggs, vanilla extract, and orange juice. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Gently fold in the cranberries and orange zest using a spatula.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool in the muffin tin for 5 minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for up to 3 months.
