- 2 cups cooked, shredded chicken (rotisserie works great)
- 1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 4 large flour tortillas
- ½ cup salsa or pico de gallo
- ½ tsp cumin
- ½ tsp chili powder
- 1 tbsp oil or butter (for pan frying)
- Optional toppings: sour cream, avocado, jalapeños
Instructions
- Season chicken: Toss shredded chicken with taco seasoning, garlic powder, cumin, and salt.
- Assemble: On half of each tortilla, layer cheese, chicken, peppers, onion, cilantro, and jalapeño. Top with more cheese.
- Fold: Fold tortillas in half to enclose filling.
- Cook: Melt 1/2 tbsp butter in a skillet over medium heat. Cook each quesadilla 2-3 minutes per side until golden and cheese melts.
- Slice and serve with dips of choice.
