    • 2 cups cooked, shredded chicken (rotisserie works great)
    • 1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
    • 4 large flour tortillas
    • ½ cup salsa or pico de gallo
    • ½ tsp cumin
    • ½ tsp chili powder
    • 1 tbsp oil or butter (for pan frying)

    Instructions

    1. Season chicken: Toss shredded chicken with taco seasoning, garlic powder, cumin, and salt.
    2. Assemble: On half of each tortilla, layer cheese, chicken, peppers, onion, cilantro, and jalapeño. Top with more cheese.
    3. Fold: Fold tortillas in half to enclose filling.
