Ingredients

- 2 cups fresh or frozen cherries
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
- 1 cup all-purpose flour
- ½ cup rolled oats
- ½ cup brown sugar
- ½ teaspoon cinnamon (optional)
- ½ cup cold butter, cubed
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract. Toss gently and pour into a pie dish.
- In another bowl, mix flour, oats, brown sugar, and cinnamon. Add cold, cubed butter and mix until crumbly.
- Sprinkle crumb mixture over cherry filling, dot with butter.
- Bake for 45-50 minutes until topping is golden brown and filling is bubbling.
- Cool slightly before serving.
Notes
Store leftovers in the fridge for up to 3 days; can also freeze well.
