Description

A creamy and cheesy delight that combines ground beef, tender potatoes, and melted cheddar cheese, perfect for warm family gatherings.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: green onions, sour cream, croutons

Instructions

  1. In a large pot over medium heat, melt butter. Add chopped onion and minced garlic, sautéing until soft and fragrant, about 4-5 minutes.
  2. Push onion and garlic to the sides of the pot, add ground beef, and cook until browned, about 6-8 minutes. Season lightly with salt and pepper.
  3. Stir in diced potatoes and chicken broth. Bring to a boil, reduce heat, and let it simmer for 15-20 minutes, or until potatoes are tender.
  4. Stir in milk and cheddar cheese. Cook until cheese is melted and the mixture is creamy, about 5 minutes.
  5. Taste and adjust seasoning with more salt and pepper if necessary. Serve hot, garnished with green onions or sour cream if desired.

Notes

For creamier soup, you can blend half of the mixture. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
