- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups diced Roma or cherry tomatoes
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/3 cup fresh basil, chopped
- 1/4 teaspoon salt or to taste
- 1/2 cup shredded mozzarella cheese (optional)
- Balsamic glaze for drizzling (optional)
Instructions
- Season the chicken with salt, black pepper, garlic powder, and Italian seasoning. Let marinate for 10 minutes.
- Cook the chicken by grilling, baking, or pan-searing until the internal temperature reaches 165°F (74°C).
- Prepare the bruschetta topping by combining tomatoes, basil, garlic, balsamic vinegar, olive oil, and salt in a bowl. Let sit for at least 10 minutes.
- Assemble the dish by spooning the bruschetta topping over the cooked chicken. If using mozzarella, sprinkle on top and broil for 2-3 minutes until melted.
- Drizzle with balsamic glaze and serve immediately with your choice of sides.
