Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups diced Roma or cherry tomatoes
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/3 cup fresh basil, chopped
  • 1/4 teaspoon salt or to taste
  • 1/2 cup shredded mozzarella cheese (optional)
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Season the chicken with salt, black pepper, garlic powder, and Italian seasoning. Let marinate for 10 minutes.
  2. Cook the chicken by grilling, baking, or pan-searing until the internal temperature reaches 165°F (74°C).
  3. Prepare the bruschetta topping by combining tomatoes, basil, garlic, balsamic vinegar, olive oil, and salt in a bowl. Let sit for at least 10 minutes.
  4. Assemble the dish by spooning the bruschetta topping over the cooked chicken. If using mozzarella, sprinkle on top and broil for 2-3 minutes until melted.
  5. Drizzle with balsamic glaze and serve immediately with your choice of sides.
