Ingredients

  • 4 cups blueberries (washed and dried)
  • 1/4 cup granulated sugar
  • 1 tbsp corn starch
  • 3 tbsp raw sugar
  • 1 egg (whisked)

Instructions

Step 1: Making the Crust

  1. In a medium bowl, combine 1 1/2 cups all-purpose flour and 1/4 tsp salt.
  2. Grate 8 tbsp of very cold unsalted butter into the flour mixture. Toss gently to combine.
  3. Chef’s Tip: Make sure the butter stays cold for a flaky crust. You can even freeze it before grating!
  4. In a separate bowl, whisk together 1 large egg, 1 tbsp of icy water, and 1 tsp of white vinegar.
  5. Add the liquid ingredients to the flour mixture, stirring until it forms a shaggy dough. If it’s too dry, add a splash more cold water.
  6. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Prepare for Baking

  1. Preheat your oven to 375°F (190°C).
  2. On a sheet of parchment paper, roll out the chilled dough into a 12-inch circle. Don’t worry if it’s not perfect; rustic is the name of the game!
  3. Ideal Timing: Rolling should take about 5-10 minutes.

Step 3: Prepare the Filling

  1. In a medium bowl, gently toss 4 cups of blueberries, 1/4 cup granulated sugar, and 1 tbsp cornstarch until evenly mixed.
  2. A dash of lemon juice and zest would add delightful brightness!

Step 4: Assemble the Galette

  1. Dump the blueberry mixture in the center of your rolled dough, leaving about 2 inches of crust around the edges.
  2. Carefully fold the edges of the dough over the filling, overlapping slightly.
  3. Brush the outer crust with the whisked egg and sprinkle with 3 tbsp raw sugar for sweetness and crunch.

Step 5: Bake It Up!

  1. Bake in the preheated oven for 35-40 minutes, or until the filling is bubbly and the crust is a lovely golden brown.
