Description

A refreshing cold salad featuring crisp green beans, tangy balsamic vinegar, and creamy feta, perfect for summer gatherings.


Ingredients

Scale
  • Fresh string beans
  • 1 cup ripe tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • 1/2 cup cooked and crumbled bacon (optional)

Instructions

  1. Blanch the string beans in boiling salted water for 2-3 minutes, then transfer to an ice water bath.
  2. In a mixing bowl, whisk together balsamic vinegar, olive oil, Italian seasoning, salt, and pepper.
  3. Combine the cooled string beans, tomatoes, and feta cheese in a large bowl.
  4. Drizzle the dressing over the salad and toss gently.
  5. If desired, sprinkle crumbled bacon on top before serving.

Notes

This salad pairs well with grilled meats and can be made a day in advance. Store the salad and dressing separately until ready to serve.
