Description

Juicy, flavorful chicken breasts coated in a crispy ranch-seasoned breading, baked to golden perfection – an effortless weeknight dinner with only 5 minutes of prep!


Ingredients

4 pieces boneless, skinless chicken breasts

1 packet ranch seasoning mix

1/2 cup sour cream

1/2 cup mayonnaise

1 cup shredded cheddar cheese

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup breadcrumbs

Fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. In shallow dish, mix panko, Parmesan, ranch seasoning, garlic powder and pepper.
  3. Dip chicken breasts in melted butter, then coat evenly with breadcrumb mixture.
  4. Place on baking sheet. Drizzle any remaining butter over chicken.
  5. Bake 20-25 minutes until internal temperature reaches 165°F (74°C) and coating is golden.
  6. Garnish with parsley. Serve with ranch dressing if desired.

Notes

  • For extra crispiness, broil 1-2 minutes at the end
  • Can use chicken thighs – increase baking time to 30-35 minutes
  • Make your own ranch seasoning with 2 tbsp dried buttermilk powder, 1 tsp each dill, parsley, onion powder, and 1/2 tsp garlic powder
  • Leftovers make great chicken sandwiches
