Description

Delightful, elongated treats made from sweetened shredded coconut, drenched in creamy white chocolate, perfect for Easter celebrations.

Ingredients

Scale
  • 1 cup shredded sweetened coconut
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 8 ounces white chocolate chips
  • 1 teaspoon coconut oil
  • 2 tablespoons pastel-colored sprinkle mix

Instructions

  1. Mix the Base: In a medium bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Stir thoroughly until a sticky mixture forms.
  2. Shape Your Tails: With a teaspoon or your hands, shape small elongated “tails” from the coconut mixture, about 2 to 3 inches in length. Place each one on a parchment-lined baking sheet.
  3. Chill to Firm Up: Refrigerate the coconut tails for about 30 minutes to firm up.
  4. Melt the Chocolate: Melt white chocolate chips and coconut oil together, either using a double boiler or in the microwave.
  5. Dip and Decorate: Dip each tail into the melted white chocolate and let excess drip off, then place them back onto the parchment-lined baking sheet.
  6. Sprinkle Festivity: Immediately sprinkle each coated tail with pastel-colored sprinkles.
  7. Final Chill: Return the decorated tails to the refrigerator for about 15 minutes until the chocolate is fully hardened.

Notes

These treats can last up to 3 days at room temperature, up to 1 week in the refrigerator, and up to 3 months in the freezer.
