- ½ teaspoon baking soda
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 1 cup buttermilk
- Food coloring (various colors)
- Decorative sprinkles
Instructions
- Preheat the oven to 350°F (175°C).
- Line baking sheets with parchment paper.
- In a medium bowl, combine flour, baking powder, and baking soda; whisk and set aside.
- Cream together softened butter and granulated sugar in a large bowl for 3-4 minutes.
- Add eggs one at a time and mix in vanilla extract.
- Gradually add the dry mixture alternating with buttermilk, starting and ending with the dry ingredients.
- Divide batter and mix in food coloring if desired.
- Scoop heaping tablespoons of batter onto prepared sheets, leaving space for spreading.
- Bake for 12-15 minutes or until golden and springy.
- Cool on baking sheet for a few minutes before transferring to a wire rack.
