Ingredients

Scale
  • 4 russet or Yukon gold potatoes, thinly sliced
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups heavy cream

  • 1 tablespoon fresh thyme
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

  1. Preheat the oven to 375°F (190°C).
  2. Thinly slice the potatoes to about 1/8 inch thick.
  3. In a saucepan, heat the heavy cream with minced garlic, thyme, cayenne pepper, salt, and pepper for about 5 minutes.
  4. In a baking dish, layer the potato slices, drizzling with the cream mixture and topping with cheese repeatedly until all potatoes are used.
  5. Bake for 45-60 minutes, covering with foil for the first 30 minutes.
  6. Let it cool slightly before serving.

Notes

For an extra kick, consider adding a sprinkle of smoked paprika to the cheese sauce.
