- 4 russet or Yukon gold potatoes, thinly sliced
- 2 cups sharp cheddar cheese, shredded
- 2 cups heavy cream
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Thinly slice the potatoes to about 1/8 inch thick.
- In a saucepan, heat the heavy cream with minced garlic, thyme, cayenne pepper, salt, and pepper for about 5 minutes.
- In a baking dish, layer the potato slices, drizzling with the cream mixture and topping with cheese repeatedly until all potatoes are used.
- Bake for 45-60 minutes, covering with foil for the first 30 minutes.
- Let it cool slightly before serving.
Notes
For an extra kick, consider adding a sprinkle of smoked paprika to the cheese sauce.
