- 2 cups dark chocolate chips
- 1 teaspoon peppermint extract
- Crushed peppermint candies for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy, about 3 minutes.
- Beat in each egg one at a time, then stir in the vanilla extract and peppermint extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
- Fold in the dark chocolate chips gently.
- Line a baking sheet with parchment paper and drop spoonfuls of dough onto the sheet, spacing them about 2 inches apart.
- Sprinkle crushed peppermint candies on each cookie.
- Bake in the preheated oven for 10-12 minutes, until the edges are set but the centers remain soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks.
