  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder

  • 1/2 teaspoon salt
  • 2 cups dark chocolate chips
  • 1 teaspoon peppermint extract
  • Crushed peppermint candies for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy, about 3 minutes.
  3. Beat in each egg one at a time, then stir in the vanilla extract and peppermint extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
  5. Fold in the dark chocolate chips gently.
  6. Line a baking sheet with parchment paper and drop spoonfuls of dough onto the sheet, spacing them about 2 inches apart.
  7. Sprinkle crushed peppermint candies on each cookie.
  8. Bake in the preheated oven for 10-12 minutes, until the edges are set but the centers remain soft.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks.
