Description

Delicious and nutritious breakfast bars made with wholesome oats, nuts, and berries, perfect for busy mornings.


Ingredients

Scale
  • 1 1/2 cups rolled oats
  • 1/2 cup chopped almonds
  • 1/4 cup sunflower seeds
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup mixed berries (fresh or frozen)
  • 2 tablespoons chia seeds
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper.
  3. Combine rolled oats, chopped almonds, sunflower seeds, honey, melted coconut oil, vanilla extract, and salt in a large bowl. Mix well.
  4. Press the mixture firmly into the prepared pan.
  5. Bake for 15-20 minutes until lightly golden brown.
  6. Cook mixed berries, chia seeds, and maple syrup over medium heat until thickened, about 8-10 minutes.
  7. Spread berry topping over the baked base and cool completely in the pan.
  8. Cut into squares and enjoy!

Notes

Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
