Description

Delicious and versatile chickpea fritters that are perfect for snacking or serving as a main dish.


Ingredients

Scale
  • 1 can chickpeas (drained and rinsed)
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh herbs (parsley, cilantro, or dill), chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 egg (or flax egg for a vegan option)
  • Salt and pepper to taste
  • Oil for frying (avocado oil or olive oil recommended)

Instructions

  1. Mash the chickpeas in a large bowl until mostly smooth, leaving some chunks for texture.
  2. Mix the breadcrumbs, chopped herbs, garlic powder, cumin, paprika, egg (or flax egg), salt, and pepper into the bowl and stir until well combined.
  3. Form about 2-3 tablespoons of the mixture into small patties.
  4. Heat 1/4 inch of oil in a skillet over medium heat until hot.
  5. Fry the patties for 4-5 minutes on each side until golden brown and crispy.
  6. Drain the fritters on a paper towel-lined plate to absorb excess oil.
  7. Serve warm with your favorite dipping sauce or in a fresh salad.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze uncooked patties for up to 2 months.
