Ingredients

- 1 can chickpeas (drained and rinsed)
- 1/2 cup breadcrumbs
- 1/4 cup fresh herbs (parsley, cilantro, or dill), chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1 egg (or flax egg for a vegan option)
- Salt and pepper to taste
- Oil for frying (avocado oil or olive oil recommended)
Instructions
- Mash the chickpeas in a large bowl until mostly smooth, leaving some chunks for texture.
- Mix the breadcrumbs, chopped herbs, garlic powder, cumin, paprika, egg (or flax egg), salt, and pepper into the bowl and stir until well combined.
- Form about 2-3 tablespoons of the mixture into small patties.
- Heat 1/4 inch of oil in a skillet over medium heat until hot.
- Fry the patties for 4-5 minutes on each side until golden brown and crispy.
- Drain the fritters on a paper towel-lined plate to absorb excess oil.
- Serve warm with your favorite dipping sauce or in a fresh salad.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze uncooked patties for up to 2 months.
