Ingredients

  • 2 medium zucchinis (fresh and firm)
  • 1 cup almond flour (finely ground)
  • 1/4 cup ground flaxseed (or chia seeds)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 eggs (room temperature)
  • 1/4 cup grated parmesan cheese (optional)
  • Sesame seeds or poppy seeds for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Grate the zucchinis and squeeze out moisture.
  3. Mix the drained zucchini with almond flour, flaxseed, baking powder, salt, garlic powder, onion powder, eggs, and parmesan cheese.
  4. Shape the dough into bagels and place them on the baking sheet.
